Thank you for this query. Cheese is increasingly being used as an ingredient and issues similar to the one you describe are not uncommon.

Does hard water affects finished product viscosity of cheese soups and sauces after it's been frozen? I am trying to develop a frozen cheese soup which viscosity is in target but after 24 hours of been frozen in a sealed bag and then its been dropped into hot water to warm it up ends up with a very thick. Like a Cheese Sauce instead of a cheese soup. Does this has to do with the hard water used in the soup?
