Try some of Professor Pat Fox's cheese and dairy science books, they generally have a marketing related chapter with useful trend data. These may be in your college/university library. Dairy Science Abstracts are a very useful source of information also.

	thanks for the reply have had a look at the mintel site but they want £1000 for one report. I need free information as its part of my degree. Has anyone seen anywhere with UK cheese sales, whey sales and uses? thanks again Pete

	Pete Mintel http://www.mintel.com/ can provide good overview information on markets. This can let you see whether cheese sales are going up or down and how different varieties are performing. While this information is helpful you will have to obtain information from potential buyers to see if there is a market for your product. There are several ways this may be done. Depending on where you are in the UK there may be local access to a marketing grant that might enable you to employ a consultant. You may also be able to access help through an appropriate government department or local enterprise agency. If you are close to a university or college offerring "food courses" someone there may also be able to help. You might also consider talking directly to local shops, restaurants, and the major food retailers to find what they want. Beacuse there is so much Cheddar available you will have to have a special product if you are to be successful. Good luck . Mike

	making cheddar cheese, theoretically , i am struggling to find UK information to suggest whether there is a market for the cheese and then for thw whey products that could be produced from the production of the cheese. can anyone point me to a good website any information greatly appreciated. thanks pete
